			<title>If you&#039;re doing 80, might as well do 120!</title>

			<description><![CDATA[The immortal words of Scott...  We started out today with the intention of brewing 80 gallons for DSG.  BUUUUUUT, we got the bright idea to go ahead and shoot for 120 gallons!  Why do we drink while we brew?  <br /><br />Here we are -- 60 gallons in the fermenter, 90 mashed-in, and we&#039;re barely in shape to tackle the rest.  Joey has pointed out that at least we&#039;re all still standing!  I hope this turns out okay.]]></description>

			<title>4 guys, 30 gallons</title>

			<description><![CDATA[So, with the updated brewrig, we no longer have to lift 60+ gallons of hot wort.  The pump from the mash tun to the kettle means much less manual labor!  That&#039;s the upside.  The down side is that we get lazy and start drinking beer, and then we decide its a good idea to blog about it.<br /><br />So today, we&#039;re brewing:<br /><br />&gt;10 gallons of Oktoberfest<br />&gt;10 gallons of Chocolate Porter<br />&gt;10 gallons of IPA (Dick Cheney)]]></description>

			<title>Lessons from Big Brew Day</title>

			<description><![CDATA[Whew.  And again for posterity,..&quot;whew&quot;.  60 gallons are fermenting, and lemmetellya, it was work.  You learn a few things when brewing 6 10-gallon batches on the road.  In no particular order:<br /><br /><b>Timing Is Everything</b>.  We planned on getting down there in time for an 8:00 AM mash-in.  Doing so would enable a 4PM end-of-day whistle, and subsequent satisfactory celebratory soiree.  Didn&#039;t happen.  After a couple wrong turns, sidesteps and whatnot, we rolled into ground-zero around a quarter after 8:00.  We set up shop, got the water going (oh, i&#039;ll get to that later), and doughed-in at roughly 9 am with batch #1.  We&#039;d spend the rest of the day trying to cheat back that 60 minutes somehow.<br /><br /><b>Make a list</b>.  I gotta hand it to Scott n&#039; Livvie.  They did a heck of a job cleaning, organizing and loading up the gear that became the HCB Roadshow.  It cant be easy to coordinate the logistics for turning 150+ lbs of grain into sweet frothy goodness -- on the road.  We only missed on a couple items:  propane and hoses.  Not bad.<br /><br /><b>Stay on top of water</b>.  We need to heat water to mash, water to lauter, water to sparge, then repeat.  We need this water on-demand.  And,..it&#039;s gotta be the right temp.  If it&#039;s not, we wait.  That throws the process off kilter.  See &quot;timing is everything&quot;.  Oh, it helps to have a good &quot;Waterboy&quot;.  Where is Adam Sandler when you need him, eh?<br /><br /><b>It&#039;s called support for a reason</b>.  Our regular brew crew consists of Me, Scott, Clint and Joey.  Without Joey and Clint, Scott and I were scrambling.   If ever we needed a reminder on how important it is to have our full compliment, we got it.  Clint &amp; Joey - we missed you.<br /><br /><b>Homebrewers are a special breed</b>.  Not having met most of these guys before didnt matter at all.  We were welcomed with outstanding generosity and camaraderie.  If we forgot stuff (see &quot;make a list&quot;), there was always someone willing to lend a hand.  I hope to cross paths with these folks again.  Thanks to all the Rocket City Guys - you were awesome.<br /><br />In all, it was a very rewarding experience.  I dont know that I would willingly brew that intensively on the road again, but we&#039;ll probably hit that up back at HCB on occasion.  A big thanks goes out to Dan who opened his pad up to us hooligans.  Had a great time and I am looking forward to the next Big Brew Day.]]></description>

			<title>Brewery Schematic v1.0</title>

			<description><![CDATA[After labeling the picture of the new brew setup, i figured it was about time to draw up a schematic of our system.  This is probably the 10th iteration (or so) of our brew setup, but the first attempt at a diagram.  Thus, the 1.0 designation.  We can, (and often do) double-up on the Mash Tuns and Brew Kettles.  Just so long as we&#039;re 30 minutes apart, we&#039;re good.  Also, the secondary chiller is only required when outside temps are above 80.  Otherwise, the initial heat exchanger is sufficient to bring the wort to 70 degrees.  <br /><img src="images/schematic.jpg" width="500" height="370" border="0" alt="" />]]></description>

			<title>New Brew Rig</title>

			<description><![CDATA[Woo hoo!  Brewed up 40 gallons of beer on the new rig this weekend.  Good work Scott!  Gotta shout out props to Clint as well -- he&#039;s the best brew hand!  Now we&#039;re fermenting Dick Cheney, Leffe, All Star, and PIG.
